Ricciola: The greater amberjack (Seriola dumerili) tend to like the high seas, and are delicately flavored, with firm, white flesh. They can be quite large, so I usually purchase ricciola in fillets and grill or bake them with just a touch of olive oil, lemon and breadcrumbs.
